Ingredients

  • 1 package frozen chopped spinach
  • 1 cup Parmesan cheese
  • 1 cup fine dry breadcrumbs
  • 1 pound Ricotta cheese
  • 4 eggs

Instructions

  1. Squeeze the frozen chopped spinach dry to remove excess moisture.
  2. In a mixing bowl, combine the spinach, Parmesan cheese, dry breadcrumbs, ricotta cheese, and eggs.
  3. Mix all ingredients thoroughly until well combined.
  4. Roll the mixture into small balls about the size of a walnut.
  5. Roll each ball in flour to coat evenly.
  6. Drop the coated balls into boiling water.
  7. Cook until the gnocchi surface floats to the top, about 2-3 minutes.
  8. Remove with a slotted spoon and serve with spaghetti sauce.
