Ingredients

  • 2 1/4 cups sifted cake flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 cups sugar
  • 1/2 cup shortening
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 eggs

Instructions

  1. Sift cake flour, baking powder, and salt into a mixing bowl.
  2. Add shortening, 2/3 cup milk, and vanilla; beat vigorously for 2 minutes.
  3. Add remaining 1/3 cup milk and eggs; beat for 2 minutes.
  4. Pour batter into two 8‑inch round pans lined with waxed paper (or into a 13×9 inch pan).
  5. Bake at 350°F (175°C) for 25–30 minutes, or until a toothpick comes out clean.
  6. Cool cakes on a wire rack, then serve or frost as desired.
