Ingredients

  • 2 1/2 c. flaked sweetened coconut
  • 2 c. unsweetened finely shredded coconut
  • 1 c. sugar
  • 3 Tbsp. all-purpose flour
  • 1/4 tsp. salt
  • 4 egg whites
  • 1 Tbsp. honey

Instructions

  1. In a large bowl, combine flaked sweetened coconut and shredded coconut until evenly mixed.
  2. In a medium mixing bowl, combine sugar, flour, and salt.
  3. Add egg whites, honey, and vanilla to the dry ingredients.
  4. Whisk rapidly until smooth.
  5. Pour the sugar and egg white mixture over the coconut mixture.
  6. Stir with a wooden spoon, then use hands to blend until evenly mixed.
  7. Cover with plastic wrap and chill for 30 minutes.
