Ingredients

  • 16 oz. cauliflower and broccoli mix
  • 3-4 potatoes, shredded
  • 3-4 carrots, shredded
  • 2 cups milk
  • 2 Tbsp. cornstarch
  • 1/4 cup water

Instructions

  1. Place vegetables in a pan with just enough water to cover and simmer until tender.
  2. Add milk to the cooked vegetables.
  3. Mix cornstarch into water to create a slurry.
  4. Gradually add the cornstarch mixture to the soup while stirring.
  5. Heat through until the soup thickens.
  6. Add cheese and stir until melted.
