Ingredients

  • Golden Delicious apple, cored and sliced
  • 17 oz. can vacuum packed whole yams
  • 2 Tbsp. frozen orange juice concentrate, thawed
  • 1 Tbsp. lemon juice
  • cinnamon to taste
  • 1 pinch ginger
  • 1 1/2 Tbsp. butter or margarine

Instructions

  1. Arrange apples and yams in a shallow casserole pan.
  2. Drizzle with orange and lemon juice.
  3. Sprinkle lightly with cinnamon and ginger.
  4. Dot with butter.
  5. Cover and bake at 350° F for 25 minutes or until apples and yams are heated and tender.
