Good Moist Date Cake

Ingredients

  • 1 c. chopped dates
  • 1/2 c. water
  • 2 1/4 c. sifted flour
  • 1 1/2 tsp. soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. cloves
  • 3/4 c. shortening
  • 3/4 c. sugar
  • 2 unbeaten eggs
  • 2/3 c. buttermilk
  • 1 tsp. vanilla

Instructions

  1. First cook 1 cup dates and 1/2 cup water for 5 minutes; stir until smooth and thick.
  2. Cool.
  3. Sift together all dry ingredients. Cream shortening, sugar and eggs one at a time, beat well.
  4. Stir in date mixture.
  5. Combine buttermilk and vanilla; add alternately with dry ingredients to creamed mixture.
  6. Can use electric mixer at low speed.
  7. Bake at 350° for 55 minutes.
  8. Can use loaf pan or 2 cake pans or Bundt pan with your favorite icing.
  9. (I use creamed cheese icing.)
