Good Moist Date Cake

Instructions
- First cook 1 cup dates and 1/2 cup water for 5 minutes; stir until smooth and thick.
- Cool.
- Sift together all dry ingredients. Cream shortening, sugar and eggs one at a time, beat well.
- Stir in date mixture.
- Combine buttermilk and vanilla; add alternately with dry ingredients to creamed mixture.
- Can use electric mixer at low speed.
- Bake at 350° for 55 minutes.
- Can use loaf pan or 2 cake pans or Bundt pan with your favorite icing.
- (I use creamed cheese icing.)
