Ingredients

  • 8 medium potatoes
  • 6 to 8 hard-boiled eggs
  • 1 1/2 to 2 Tbsp. mustard
  • 1 1/2 c. mayonnaise or Miracle Whip
  • salt to taste
  • pepper to taste

Instructions

  1. Boil potatoes with or without skins until they are soft but not mushy.
  2. Peel and cut up potatoes into cubes in a large bowl.
  3. Add cut or sliced boiled eggs.
  4. Mix in mayonnaise, mustard, salt, and pepper.
  5. Be careful not to use too much mustard.
  6. Mix well.
