  • 2 c. coarsely chopped nuts
  • 2 Tbsp. vanilla
  • 4 1/2 c. sugar
  • 1 13 oz can evaporated milk

Instructions

  1. Combine chocolate pieces, marshmallow cream, butter, nuts, and vanilla in a mixing bowl.
  2. Mix sugar and evaporated milk in a saucepan and heat to boiling.
  3. Boil the mixture for 9 minutes, stirring occasionally.
  4. Pour the hot sugar mixture over the chocolate mixture and stir until the chocolate is melted and well blended.
  5. Pour the mixture into buttered tins and refrigerate until set.

Tips & Substitutions

For a creamier fudge, consider using a mix of semi-sweet and milk chocolate pieces. If you're out of marshmallow cream, you can substitute with 1 cup of melted marshmallows. Make sure to stir continuously when boiling the sugar mixture to prevent burning. Adding a pinch of sea salt can enhance the chocolate flavor beautifully.

Serving Suggestions

Cut the fudge into small squares and serve on a decorative platter. Pair it with a scoop of vanilla ice cream or a drizzle of caramel sauce for an indulgent dessert. It also makes a delightful gift when wrapped in cellophane. This gourmet fudge pairs beautifully with Laura'S Potato Salad, creating a perfect balance for a festive gathering.

Storage & Reheating

Store leftover fudge in an airtight container at room temperature for up to two weeks. If you prefer a firmer texture, refrigerate it. To enjoy it warm again, microwave a piece for about 10-15 seconds or until just softened, but be careful not to overheat.

Frequently Asked Questions

Can I use different types of nuts in this fudge?

Absolutely! Feel free to use your favorite nuts, such as pecans, walnuts, or even almonds. Just ensure they are coarsely chopped to maintain a good texture in the fudge. You can also leave out the nuts entirely if you prefer a smooth fudge.

What should I do if my fudge doesn't set properly?

If your fudge doesn’t set, it might need more time in the refrigerator. However, if it remains too soft, you can try reheating the mixture gently and then adding a bit more sugar to help it firm up when cooled. Just make sure to follow the boiling time closely next time.

Can I add flavors or extracts to the fudge?

Yes, you can customize your fudge by adding extracts like almond or mint for a unique twist. Just a teaspoon or two will enhance the flavor without overpowering the chocolate. Experimenting with flavors can make your fudge even more gourmet!
