Ingredients

  • 8 large baking potatoes, boiled in jackets, cooked and grated
  • 1 medium onion
  • 1/2 cup margarine
  • 2 cups shredded Cheddar cheese
  • 2 cups sour cream
  • salt and pepper to taste

Instructions

  1. Melt margarine in a pan.
  2. Cook onions until soft.
  3. Mix shredded Cheddar cheese and sour cream together.
  4. Add cooked onions, salt, pepper, and grated potatoes to the cheese mixture. The mixture will be stiff.
  5. Place the mixture into a large casserole dish.
  6. Bake for 45 minutes at 400°F or until the top is brown.
  7. Let the dish set, then cool. It can be made ahead of time.
  8. Reheat before serving or serve cooled.
