- Melt semi-sweet chocolate chips in a double boiler or microwave and spread a thin layer over the bottom and up sides of the baked and cooled pie shell.
- Set aside to harden completely.
- In a saucepan, combine 1 cup of sugar, 3 tablespoons of cornstarch, and 2 tablespoons of fresh lemon juice.
- Cook over medium heat, stirring constantly, until the mixture thickens and boils.
- Remove from heat and let it cool slightly.
- Gently fold in 2 cups of sliced strawberries into the cooled filling.
- Pour the filling into the chocolate-coated pie shell.
- Arrange remaining strawberries on top of the filling as desired.
- Whip the 1 cup of sweetened whipping cream until soft peaks form.
- Spread or pipe the whipped cream over the filled pie before serving.
