Ingredients

  • 1/3 to 1/2 cup semi-sweet chocolate chips
  • 1 (9-inch) pie shell
  • 4 cups fresh strawberries, divided
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 2 tablespoons fresh lemon juice
  • 1 cup whipping cream, sweetened

Instructions

  1. Melt semi-sweet chocolate chips in a double boiler or microwave and spread a thin layer over the bottom and up sides of the baked and cooled pie shell.
  2. Set aside to harden completely.
  3. In a saucepan, combine 1 cup of sugar, 3 tablespoons of cornstarch, and 2 tablespoons of fresh lemon juice.
  4. Cook over medium heat, stirring constantly, until the mixture thickens and boils.
  5. Remove from heat and let it cool slightly.
  6. Gently fold in 2 cups of sliced strawberries into the cooled filling.
  7. Pour the filling into the chocolate-coated pie shell.
  8. Arrange remaining strawberries on top of the filling as desired.
  9. Whip the 1 cup of sweetened whipping cream until soft peaks form.
  10. Spread or pipe the whipped cream over the filled pie before serving.
