Grace'S Onion Soup

Ingredients

  • 3 lb. sliced onions
  • 3/4 c. margarine or butter
  • 1/2 tsp. thyme
  • 1 tsp. paprika
  • 1 Tbsp. Worcestershire sauce
  • 4 cans beef broth
  • 3 cans water

Instructions

  1. Melt margarine in large glass bowl in microwave.
  2. Add onions and saute for 12 to 15 minutes on High or until clear.
  3. Place 1/2 cooked onions in a large pot.
  4. Add seasonings, beef stock and water (reserve one can of water for next step.)
  5. Use reserved can of water to puree second half of cooked onions.
  6. Add this to onions on stove.
  7. Bring to slow boil and simmer for about one hour.
  8. (Can be microwaved completely in about 15 to 20 minutes on High.) Still recommend you puree one half of the onions, makes for a thicker soup.
  9. Can be served in deep soup cup, floating an English muffin with Monterey Jack cheese.
