Grace'S Onion Soup

Instructions
- Melt margarine in large glass bowl in microwave.
- Add onions and saute for 12 to 15 minutes on High or until clear.
- Place 1/2 cooked onions in a large pot.
- Add seasonings, beef stock and water (reserve one can of water for next step.)
- Use reserved can of water to puree second half of cooked onions.
- Add this to onions on stove.
- Bring to slow boil and simmer for about one hour.
- (Can be microwaved completely in about 15 to 20 minutes on High.) Still recommend you puree one half of the onions, makes for a thicker soup.
- Can be served in deep soup cup, floating an English muffin with Monterey Jack cheese.
