Ingredients

  • 1 1/2 cups sugar
  • 2 eggs
  • 1 small can crushed pineapple
  • 1 box lemon gelatin
  • 1 large can evaporated milk (almost frozen)
  • 1 pie crust

Instructions

  1. Mix sugar, eggs, and crushed pineapple together.
  2. Cook the mixture until it thickens.
  3. Remove from heat and add lemon gelatin, stirring until dissolved.
  4. Allow the filling to cool while whipping the evaporated milk until it becomes thick.
  5. Fold the whipped evaporated milk into the cooled filling.
  6. Pour the mixture into a pre-baked pie crust.
  7. Chill the pie until set before serving.
