Ingredients

  • 1 qt. warm water
  • 1/2 c. brown sugar or molasses
  • 1/4 c. hop yeast
  • 1 1/2 tsp. salt
  • unbolted flour

Instructions

  1. Thicken warm water with flour to a thin batter.
  2. Add sugar, salt, and yeast; stir in more flour until quite stiff.
  3. In the morning, add a small teaspoon of soda and enough flour to make the batter stiff enough to stir with a spoon.
  4. Put the batter into pans and let rise again.
  5. Bake in an even oven, not too hot at first, and keep warm while rising.
  6. Smooth over the loaves with a spoon or knife dipped in water.
