Ingredients

  • 1 cake yeast
  • 1 1/2 tsp sugar
  • 1 1/2 pt warm water
  • 2 medium potatoes
  • 2 tsp salt
  • 4 to 5 cups flour

Instructions

  1. Cook the potatoes and mash them.
  2. Dissolve the yeast in warm water.
  3. Add the yeast water to the mashed potatoes along with salt and sugar, mixing well.
  4. Place the mixture in a crock and leave it on a warm hearth to rise.
  5. When the mixture has risen almost to the top of the crock, begin to add flour until you have a firm dough.
  6. Let the dough rise until it doubles in size.
  7. Knead the dough well before shaping into loaves.
  8. Let the loaves rise again, then bake at 350°F for 40 to 50 minutes, or until a broom straw inserted comes out clean.
  9. Slice and spread with butter.
