Ingredients

  • 4 eggs, separated
  • 3 tsp. baking powder
  • 2 c. milk
  • 2 c. flour
  • 1 tsp. salt

Instructions

  1. Beat egg whites together until stiff peaks form. Set aside.
  2. In a large bowl, blend remaining ingredients including egg yolks.
  3. Fold in the beaten egg whites gently into the batter.
  4. Lightly oil a skillet and spoon in 1/4 cup of pancake batter for each pancake.
  5. Cook until bubbles form on top, then turn the pancake.
  6. Continue to cook until golden on the bottom.
