Ingredients

  • 2 gallons sliced cucumbers
  • 2 cups plain salt
  • 1/2 box alum
  • 1 cup vinegar
  • 1/2 box ginger
  • 5 pounds sugar
  • 2 1/2 pints vinegar

Instructions

  1. Mix cucumbers and salt with boiling water and leave for 3 days in a non-metal container.
  2. Drain, wash, and cover with boiling water again, then leave for 24 hours.
  3. Wash the cucumbers several times.
  4. Mix alum, vinegar, and ginger and add to the cucumbers, then simmer for 1 hour.
  5. Wash the cucumbers and put them in a pan with sugar, 2 1/2 pints vinegar, and pickling spices.
  6. Boil for 10 minutes and then can.
