  • 6 green peppers
  • 7 hot red peppers
  • 10 onions
  • 1 c. salt
  • 1 gal. vinegar
  • 2 1/2 c. sugar
  • 1 box mixed pickling spices, in a bag
  • 4 tsp. turmeric
  • 3 Tbsp. dry mustard

Instructions

  1. Grind green tomatoes, cabbage, green peppers, hot red peppers, and onions together.

Tips & Substitutions

For a smoother texture, consider finely chopping the vegetables instead of grinding them. If you can’t find green tomatoes, unripe red tomatoes can work as a substitute, although the flavor will differ slightly. Adjust the sugar based on your taste preference, and feel free to add extra spices like coriander or dill for more complexity. This relish pairs beautifully with Pa Dutch Pepper And Onions.

Serving Suggestions

Chow chow makes a delightful condiment for grilled meats, burgers, or sandwiches, adding a tangy kick. Serve it alongside a cheese platter or incorporate it into salads for added flavor. It also pairs nicely with dishes like fried chicken or even as a topping for baked potatoes. For a refreshing drink, consider serving it with Starlight Punch for a festive touch.

Storage & Reheating

Store leftover chow chow in airtight jars in the refrigerator for up to two months. For longer storage, can it using proper canning techniques. To reheat, simply scoop out the desired amount and warm it gently on the stovetop or in the microwave, stirring occasionally to ensure even heating.

Frequently Asked Questions

Can I use other types of tomatoes?

While green tomatoes are traditional, you can use unripe red tomatoes as a substitute. However, the flavor will be less tart, so you may want to adjust the vinegar and sugar accordingly to maintain the desired balance of flavors.

How long does chow chow last after opening?

Once opened, chow chow can last in the refrigerator for about two months when stored in a sealed container. Always check for any signs of spoilage, such as off-smells or mold, before consuming.

Can I reduce the salt in this recipe?

Yes, you can reduce the salt to suit your dietary needs, but keep in mind that salt helps with the preservation of the relish. If you use less salt, consider consuming the chow chow sooner to ensure its freshness.
