Ingredients

  • 4 oz. margarine or butter
  • 12 oz. castor sugar
  • 1 egg
  • 9 oz. self-rising flour
  • 1 level tsp. ginger

Instructions

  1. Whisk butter and sugar together in a bowl until pale and fluffy.
  2. Gradually beat in the beaten egg.
  3. Sift the self-rising flour and ginger into the mixture.
  4. Work in with a fork until fairly firm dough is obtained.
  5. Roll dough into small balls about the size of a walnut.
  6. Place them on buttered baking sheets, spaced apart.
  7. Bake in the oven at 150°C (300°F) or gas mark 2 for 40 to 45 minutes, until crisp, well risen, hollow, and very lightly browned.
