Grape Leaf Rolls

Grape leaf rolls are flavorful Mediterranean appetizers filled with seasoned rice and meat, wrapped in tender grape leaves. Perfect for sharing at gatherings or as a savory snack.

Ingredients

  • 100 grape leaves
  • 1 cup rice
  • 1 1/2 lb lamb or beef, coarsely chopped
  • pepper to taste
  • cinnamon to taste
  • allspice to taste

Instructions

  1. Wash grape leaves; wash and drain rice.
  2. Mix rice, lamb or beef, spices, and juice of one lemon.
  3. Place about 1 tablespoon of meat mixture on the veined side of each grape leaf.
  4. Fold in the side ends and roll up the leaf completely.
  5. Line the bottom of a pan with 3 or 4 grape leaves on a pan rack.
  6. Arrange the rolls evenly in rows, layering and crisscrossing each layer.
  7. Place an inverted plate on top to hold down the rolls.
  8. Add water to cover the rolls.
  9. Bring to a boil; reduce heat to low and cook for 20 to 30 minutes.
  10. Add the juice of 1 lemon five minutes before removing from heat.
  11. Serve with yogurt or sour cream.
