Gravad lax is a traditional Scandinavian cured salmon appetizer featuring delicate, flavorful fish with fresh dill and a tangy mustard sauce, perfect for sophisticated gatherings.

Ingredients

  • 2 Tbsp. salt
  • 4 tsp. sugar
  • 1 tsp. peppercorn, coarsely crushed
  • 1 1/2 Tbsp. center cut fresh salmon, scaled with skin on and bones removed
  • 1 Tbsp. brandy (optional)
  • 1/2 bunch fresh dill
  • mustard sauce

Instructions

  1. In a cup, combine salt, sugar, and crushed peppercorns.
  2. Rub the mixture into all sides of the salmon.
  3. Sprinkle the salmon with brandy (optional).
  4. Place one-third of the dill in a shallow glass baking dish.
  5. Put one piece of salmon skin side down on the dill, then top with another one-third of dill.
  6. Add another piece of salmon skin side up and top with the remaining dill.
  7. Cover the salmon with plastic wrap and set a plate larger than the salmon on top.
  8. Place two heavy cans on the plate to weigh down the salmon.
  9. Refrigerate for 24 to 36 hours before serving with mustard sauce.
