- Wash and clean beans, then cover with water; simmer for 1 hour.
- Add all the other ingredients and cook on low heat for 2 hours more.
- If using ground beef, add at this time.
- For serving: Serve over brown rice; top with chopped lettuce, cheese or sour cream and salsa.
- Serve with tortilla chips.
