Ingredients

  • 2 lb. dry pinto beans
  • 2 onions, chopped
  • 4 cloves garlic, chopped
  • 2 tsp. salt
  • 1/2 c. cumin
  • 1/2 c. taco sauce
  • 1/2 c. green chilies, diced
  • 28 oz. can tomatoes
  • pepper to taste
  • lean ground beef, browned (optional)

Instructions

  1. Wash and clean beans, then cover with water; simmer for 1 hour.
  2. Add all the other ingredients and cook on low heat for 2 hours more.
  3. If using ground beef, add at this time.
  4. For serving: Serve over brown rice; top with chopped lettuce, cheese or sour cream and salsa.
  5. Serve with tortilla chips.
