- Beat together the oil, sugar, and eggs for 3 minutes.
- Combine the flour, baking powder, and baking soda in a separate bowl.
- Add the dry ingredients to the wet mixture, beating until well combined.
- Spread the stiff batter into a greased or parchment-lined 9 x 13-inch baking pan. You may need to lightly wet your hands with cold water to press it evenly into the pan.
- Bake in a preheated 350°F (175°C) oven for about 25 to 30 minutes or until golden brown.
- Invert the baked sheet onto a wire rack and let cool completely.
- Slice the cooled loaf into thirds or desired thickness.
- Arrange the cookie slices on a baking sheet and bake again until golden brown and crisp, approximately 10 minutes.
- Allow to cool on a wire rack before serving.
