Ingredients

  • 1 c. Mazola oil
  • 1 c. sugar
  • 4 eggs
  • 3 c. flour
  • 2 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 c. chopped walnuts
  • 1 tsp. anise flavoring

Instructions

  1. Beat together the oil, sugar, and eggs for 3 minutes.
  2. Combine the flour, baking powder, and baking soda in a separate bowl.
  3. Add the dry ingredients to the wet mixture, beating until well combined.
  4. Spread the stiff batter into a greased or parchment-lined 9 x 13-inch baking pan. You may need to lightly wet your hands with cold water to press it evenly into the pan.
  5. Bake in a preheated 350°F (175°C) oven for about 25 to 30 minutes or until golden brown.
  6. Invert the baked sheet onto a wire rack and let cool completely.
  7. Slice the cooled loaf into thirds or desired thickness.
  8. Arrange the cookie slices on a baking sheet and bake again until golden brown and crisp, approximately 10 minutes.
  9. Allow to cool on a wire rack before serving.
