Ingredients

  • 6 lasagna noodles
  • 10 oz. frozen chopped spinach
  • 2 c. skim milk
  • 2 Tbsp. cornstarch
  • 1 Tbsp. dried minced onion
  • 1 1/2 c. diced fully cooked ham
  • 1/2 tsp. Italian seasoning
  • 1 c. low-fat cottage cheese
  • 1 c. shredded part skim Mozzarella cheese

Instructions

  1. Cook the lasagna noodles and drain.
  2. Rinse the noodles with cold water and set aside.
  3. Cook the frozen chopped spinach according to package instructions and drain.
  4. Prepare a white sauce by combining skim milk, cornstarch, and dried minced onion in a saucepan over medium heat, stirring until thickened.
  5. In a bowl, mix the cottage cheese, shredded mozzarella, diced ham, and Italian seasoning.
  6. Layer the cooked noodles, spinach, cheese mixture, and white sauce in a baking dish, repeating layers as desired.
  7. Bake in a preheated oven at 375°F (190°C) for about 20 minutes until bubbly and golden on top.
  8. Serve hot and enjoy.
