Ingredients

  • 2 cups cooked rice
  • 2 tablespoons melted butter or oleo
  • 1 egg, beaten
  • 12 cooked pork sausage links, diced
  • 1 1/2 cups tomato sauce
  • 1/2 cup grated onion
  • 1/2 teaspoon salt
  • 1 tablespoon Italian seasoning
  • dash of pepper
  • 6 ounces mozzarella cheese, sliced
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Combine cooked rice, melted butter, and beaten egg in a bowl.
  2. Line the bottom of a 12-inch skillet or pizza pan with the rice mixture, forming a rim about 1/4-inch high around the edge.
  3. Bake at 350°F for 10 minutes.
  4. Arrange the diced cooked sausage links over the rice crust. Sprinkle with salt, Italian seasoning, and pepper.
  5. Cover with slices of mozzarella cheese.
  6. Sprinkle grated Parmesan cheese over the top.
  7. Bake at 375°F for 20 minutes until cheese is bubbly and golden.
