Ingredients

  • 1/2 lb. good Cheddar cheese, coarsely grated
  • 1 c. chopped hot green chiles
  • 6 green onions with tops, minced
  • 1 tsp. minced garlic
  • 1 jar slivered pimentos
  • mayonnaise

Instructions

  1. Mix all ingredients with enough mayonnaise to make a spreading consistency.
  2. Serve at room temperature, ideally the next day for best flavor.
  3. Use with crackers or bagels.
