Ingredients

  • 1 Tbsp. shortening
  • 1/2 c. chopped onions
  • 2 Tbsp. flour
  • 1 c. chopped green chile
  • 2 c. cooking tomatoes or 1 c. chicken broth
  • 1/4 tsp. garlic powder
  • 3/4 tsp. salt

Instructions

  1. Heat 1 tablespoon of shortening in an electric skillet over medium heat.
  2. Add 1/2 cup chopped onions and cook until softened, about 3-4 minutes.
  3. Stir in 2 tablespoons flour and cook for 1 minute to make a roux.
  4. Add 1 cup chopped green chile and cook for another 2 minutes, stirring constantly.
  5. Pour in 2 cups cooking tomatoes or 1 cup chicken broth and stir well.
  6. Add 1/4 teaspoon garlic powder and 3/4 teaspoon salt.
  7. Simmer the sauce for 10-12 minutes until thickened and flavors meld.
