Salsa Slaw

A vibrant, colorful slaw combining crunchy cabbage, sweet corn, black beans, and a tangy salsa mayo dressing, perfect for casual gatherings or as a fresh side dish.

Ingredients

  • 1 cup frozen whole kernel corn
  • 1 red onion
  • 2 (8 oz.) packages shredded cabbage
  • 1 (16 oz.) can black beans drained
  • 1/2 cup salsa
  • 1/3 cup mayonnaise

Instructions

  1. Cook the frozen corn in the microwave for 2 minutes and set aside to cool.
  2. While the corn is cooking, shred the red onion.
  3. In a large bowl, combine shredded cabbage, drained black beans, cooled corn, and shredded onion.
  4. Add salsa and mayonnaise to the bowl.
  5. Mix well until all ingredients are evenly coated.
  6. Serve immediately or refrigerate before serving.
