Ingredients

  • fresh firm green bell peppers
  • 4 cups vinegar
  • 1 cup water
  • 1 tablespoon salt

Instructions

  1. Wash peppers thoroughly.
  2. Stem and cut peppers into lengthwise strips, discarding seeds.
  3. Mix 4 cups vinegar and 1 cup water in a bowl or container.
  4. Pack pepper strips into sterilized jars.
  5. Cover peppers with the vinegar mixture.
  6. Add 1 tablespoon salt to each jar.
  7. Seal jars tightly with lids.
  8. Invert jars for 1 hour to distribute the brine.
  9. Store jars upright in a cool, dark place for at least 3 months before use.
  10. Unopened jars can be stored unrefrigerated for more than 2 years.
