Ingredients

  • 2 Tbsp. green peppercorns
  • 1 Tbsp. soft butter or margarine
  • 1 tsp. Dijon style mustard
  • 4 tender steaks (1 1/2 to 2 lb.)
  • 1 Tbsp. peanut oil or butter
  • 2 Tbsp. brandy
  • salt
  • 1 shallot
  • 2 Tbsp. finely chopped onion
  • 1 tsp. tomato paste

Instructions

  1. Rinse and drain green peppercorns and set aside.
  2. In a skillet, melt butter and cook the steaks until browned on each side, about 4 minutes per side; remove and keep warm.
  3. Add shallot to the skillet and cook until softened.
  4. Stir in tomato paste, then add brandy, scraping up any browned bits from the pan.
  5. Return the steaks to the pan, add green peppercorns, Dijon mustard, and salt.
  6. Pour in whipping cream, bring to a simmer, and cook until the sauce thickens slightly, about 5 minutes.
  7. Serve the steaks with the sauce spooned over.
