Ingredients

  • 1 gal. green tomatoes
  • 6 onions
  • 1/4 c. salt
  • 3 c. sugar
  • 2 pods hot red pepper
  • 1 Tbsp. ground mustard
  • 3 pods red sweet pepper
  • 4 to 5 Tbsp. mixed pickle spices

Instructions

  1. Slice the green tomatoes and onions.
  2. Chop the red and hot red peppers.
  3. Sprinkle the sliced tomatoes and onions with salt and let stand overnight; then drain.
  4. Boil the sugar, seasonings, and vinegar for approximately 5 minutes.
  5. Tie the mixed pickle spices in a bag.
  6. Cool the syrup slightly.
  7. Add the drained tomatoes, onions, and peppers to the syrup and simmer for about 60 minutes until a syrup forms.
  8. Pack the hot relish into sterilized jars and seal.
