Grilled Pineapple

Ingredients

  • 1 large can pineapple slices
  • 6 Tbsp. unsalted butter, melted
  • 1 c. brown sugar

Instructions

  1. Shuck corn; wash and cut thusly:
  2. Barely tip the kernels and rub back of knife over cob to get all the juice.
  3. Put a good amount of oil (not butter) in heavy pan.
  4. Saute onions, green pepper and a little garlic a few minutes.
  5. Add corn mixture and a lot of water. Cook on medium heat with lid partly on.
  6. Stir occasionally.
  7. Add more water if needed.
  8. Do not add salt until dish is finished because it will make it tough.
  9. About halfway done (30 or 40 minutes), add some sugar to taste.
  10. Later add a good amount of butter.
  11. It is cooked when oil forms around the edges, about an hour.
  12. Add green onions and parsley if desired.
  13. Salt and pepper to taste.
  14. Remember, plenty of water, oil and butter.
  15. Good luck! Keep lid partly on.
