Grilled Veggie Tostadas

Ingredients

  • 2 whole Corn Tortillas
  • 1 whole Anaheim Pepper
  • 1 whole Yellow Squash
  • 2 whole Crimini Mushrooms
  • 2 Tablespoons Guacamole
  • 2 Tablespoons Pepper Jack Cheese, Grated

Instructions

  1. Char tortillas over medium heat on your barbecue grill or gas stove.
  2. Do the same with the vegetables.
  3. When done, slice the vegetables.
  4. Spread guacamole evenly on each tortilla.
  5. Top with pepper, squash, mushrooms, cheese and radish.
  6. Garnish with cilantro and finish with salsa verde.
  7. Enjoy!
