Ingredients

  • 2 lb. ground beef
  • 1/2 tsp. garlic powder
  • pinch of mustard seed
  • 2 Tbsp. liquid smoke
  • 3 Tbsp. Morton Tender Quick salt
  • 1 c. water

Instructions

  1. Blend all ingredients thoroughly in a mixing bowl.
  2. Form the mixture into 18-inch long rolls with a diameter of 2 1/2 inches.
  3. Wrap each roll in foil.
  4. Refrigerate for 24 hours to cure.
  5. Poke holes in the foil and place the rolls on a broiler pan.
  6. Bake at 325°F (160°C) for 90 minutes.
  7. Unwrap to cool completely.
  8. Wrap in plastic wrap for storage.
