Ingredients

  • 1 Tbsp. unflavored gelatin
  • 1/4 c. lemon juice
  • 4 eggs, separated
  • 1/8 tsp. red food coloring
  • 1 (6 oz.) can frozen guava nectar, thawed
  • 1 baked 9-inch pie shell
  • 1/4 c. cold water
  • whipped cream
  • 1/4 c. water
  • 2 Tbsp. sugar
  • 1/4 tsp. salt

Instructions

  1. Soften the unflavored gelatin in cold water.
  2. Add the sugar and lemon juice to the thoroughly beaten egg yolks.
  3. Cook on low heat until thick, stirring constantly.
  4. Blend in the softened gelatin and remove from heat.
  5. Cool slightly before adding the thawed guava nectar and red food coloring.
  6. Whip the egg whites until stiff peaks form.
  7. Fold the whipped egg whites into the cooled gelatin mixture.
  8. Pour the mixture into the baked 9-inch pie shell.
  9. Chill the pie until set, about 4 hours.
  10. Serve topped with whipped cream.
