Ingredients

  • 4 large baking potatoes
  • 1/2 cup Parmesan cheese
  • 1 teaspoon seasoned salt
  • 1/4 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/4 teaspoon onion powder
  • freshly ground pepper

Instructions

  1. Wash and drain the potatoes, then cut into lengthwise quarters.
  2. Combine Parmesan cheese, seasoned salt, garlic powder, dried basil, onion powder, and freshly ground pepper on a large paper plate.
  3. Press the cut surfaces of the potatoes firmly into the cheese and spice mixture.
  4. Place the potato slices, cut sides down, on a vegetable oil-sprayed cookie sheet 2 inches apart.
  5. Roast the potatoes in a 350°F (175°C) oven for 30 minutes.
  6. Turn the potatoes so the other cut side is on the cookie sheet using a metal spatula.
  7. Cook for an additional 30 minutes until golden and crispy.
