Guinness Fruit Cake

Ingredients

  • 3 cups mixed dried fruit
  • 1/2 cup mixed glace cherries, quartered
  • 3/4 cup glace orange slices, finely chopped, plus additional slices, to decorate
  • 12 tbsp (1 1/2 sticks) butter, chopped
  • 3/4 cup firmly packed dark brown sugar
  • 1 1/2 cups Guinness or dark beer
  • 3 None eggs, lightly beaten
  • 1 1/4 cups flour
  • 3/4 cup self-rising flour
  • 1 tsp ground nutmeg
  • 1/2 tsp ground ginger

Instructions

  1. Preheat the oven to 350°F. Grease and line the bottom and sides of a deep 9-inch round cake pan with 3 layers of parchment paper, extending the paper 2 inches above rim.
  2. Combine the fruit, butter, sugar and Guinness in a large saucepan. Cook and stir for 4-5 mins or until the sugar dissolves. Bring to a boil; remove from the heat. Transfer to a large heatproof bowl and cool for 20 mins.
  3. Stir the eggs, sifted flours and spices into the fruit mixture. Spoon the mixture into the prepared pan and smooth the surface.
  4. Bake for 1 1/2 hours or until a skewer inserted at center comes out clean. Cover the pan tightly with foil and cool overnight.
  5. Serve the cake topped with additional orange slices. Brush with jam, then dust with powdered sugar.
