Ingredients

  • 1 cup shortening or butter or margarine
  • 4 eggs, separated
  • Pinch of salt
  • 1/2 cup milk
  • 1 teaspoon lemon extract
  • 1 1/2 cups sugar
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla

Instructions

  1. Preheat the oven and prepare a baking pan.
  2. Cream the shortening or butter with the sugar until light and fluffy.
  3. Separate the eggs, then beat the egg yolks into the creamed mixture one at a time.
  4. Add the milk, lemon extract, and vanilla to the mixture and blend well.
  5. Sift together the flour, baking powder, and salt.
  6. Gradually fold the dry ingredients into the wet mixture until just combined.
  7. In a separate bowl, beat the egg whites until stiff peaks form.
  8. Gently fold the egg whites into the batter.
  9. Pour the batter into the prepared pan and bake for about 60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Option: Omit lemon flavoring and add 1 cup chopped nuts to the batter before baking.
