Halupkies are hearty stuffed cabbage rolls filled with seasoned beef and rice, simmered in tomato sauce for a comforting, family-friendly meal with rich flavors.

Ingredients

  • 3 lb. hamburger
  • 1 cup chopped onion
  • salt to taste
  • 1 large head cabbage
  • 2 cups rice
  • 1 stick oleo
  • pepper to taste
  • 2 quarts tomatoes

Instructions

  1. Brown chopped onion in oleo (margarine).
  2. Cook rice in boiling water for 5 minutes and drain.
  3. Combine hamburger, browned onion, cooked rice, salt, and pepper in a bowl.
  4. Remove the core from the cabbage head.
  5. Cook cabbage in boiling water to loosen leaves and soften.
  6. Remove leaves from water; drain and cool.
  7. Stuff each cabbage leaf with the hamburger mixture and wrap.
  8. Layer the stuffed cabbage leaves in a large pot.
  9. Pour the tomatoes on top of the layered cabbage.
  10. Cover the pot.
  11. Simmer for 1 hour.
