- Brown the ground beef in a skillet; drain excess fat.
- Drain the tomatoes, reserving the liquid, and add the tomatoes to the browned meat.
- Pour the rice on top, then add the reserved tomato juice and enough water to make 2 1/2 cups in total.
- Add the taco seasoning, stir well, and cover the skillet.
- Cook for 25 to 30 minutes until the rice is tender and the mixture is heated through.
- Sprinkle grated cheese on top when ready and serve.
