Ingredients

  • 1 lb. ground beef
  • 1 can tomatoes
  • 1 cup rice
  • water
  • 1 package taco seasoning
  • 1 cup grated cheese

Instructions

  1. Brown the ground beef in a skillet; drain excess fat.
  2. Drain the tomatoes, reserving the liquid, and add the tomatoes to the browned meat.
  3. Pour the rice on top, then add the reserved tomato juice and enough water to make 2 1/2 cups in total.
  4. Add the taco seasoning, stir well, and cover the skillet.
  5. Cook for 25 to 30 minutes until the rice is tender and the mixture is heated through.
  6. Sprinkle grated cheese on top when ready and serve.
