Harvest Vegetable Pie

Ingredients

  • 2 c. broccoli
  • 1/4 c. chopped onion
  • 1 c. shredded Cheddar cheese
  • 1 1/4 c. milk
  • 3/4 c. Bisquick mix
  • 3 eggs
  • 1 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Steam broccoli until almost tender.
  2. Drain thoroughly.
  3. Chop broccoli; add onion and cheese.
  4. Fold together lightly.
  5. Arrange in a greased 10-inch pie pan.
  6. In mixing bowl, beat eggs, milk, Bisquick mix, salt and pepper together with wire whip for 1 minute.
  7. Pour egg mixture over vegetables.
  8. Bake at 325° for 35 to 45 minutes or until golden brown.
