Ingredients

  • 3 medium potatoes
  • 3 Tbsp. butter
  • 1/4 c. finely chopped onion
  • 1/2 tsp. salt
  • dash of pepper

Instructions

  1. Prepare and cook whole potatoes.
  2. Drain the cooked potatoes.
  3. Peel potatoes and shred to make 3 cups.
  4. In a medium skillet, melt butter over low heat.
  5. Combine shredded potatoes, chopped onion, salt, and pepper.
  6. Pat the mixture into the skillet to form an even layer.
  7. Cook for about 15 to 20 minutes or until the underside is crisp.
  8. Turn and cook until the other side is also crisp.
