Ingredients

  • 1 (1 lb. 4 oz.) can crushed pineapple with juice
  • 1 (7 oz.) bag Angel Flake coconut
  • 4 eggs
  • 1 1/2 cups sugar
  • 3 3/4 cups flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda

Instructions

  1. Combine the crushed pineapple with juice and the coconut in a mixing bowl.
  2. Add the beaten eggs to the pineapple and coconut mixture and mix well.
  3. Sift together the sugar, flour, salt, and baking soda in a separate bowl.
  4. Add the dry ingredients to the pineapple mixture and stir until just combined.
  5. Pour the batter into well-greased and floured pans.
  6. Bake at 325°F (163°C) for 1 hour or until a toothpick inserted in the center comes out clean.
  7. Remove from oven and let cool before removing from pans.
