Sweet and tropical Hawaiian Fruit Bars combine crushed pineapple, apples, coconut extract, and cinnamon for a flavorful treat perfect for snack time or dessert. Suitable for all ages.

Ingredients

  • 4 slices whole wheat bread, made into fine crumbs in blender
  • 1-1/3 cups instant nonfat dry milk
  • 1/2 teaspoon baking powder
  • 2 tablespoons margarine, softened
  • 1 cup crushed pineapple, no sugar added
  • 2 medium apples, peeled, cored, and grated
  • Artificial sweetener to equal 1/2 cup sugar
  • 1/2 teaspoon coconut extract
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon

Instructions

  1. In a bowl, combine all ingredients in the order given.
  2. Mix after each addition with a wire whip or electric mixer.
  3. Pour batter into an 8 x 8 inch nonstick pan.
  4. Bake at 350°F (175°C) for 1 hour or until done.
  5. Loosen the cake from the pan with a spatula.
  6. Cut into bars, dividing equally into 4 portions.
