Ingredients

  • 4 eggs
  • 1 1/2 cups sugar
  • 1/4 teaspoon cream of tartar
  • 3 tablespoons lemon juice
  • 1 tablespoon grated lemon rind
  • 1 pint whipping cream

Instructions

  1. Beat 4 egg whites until frothy; add 1 cup sugar, sifted with cream of tartar.
  2. Whip until it holds a stiff, glossy peak. Spread the mixture in a well-greased 9-inch pie pan and bake one hour at 275°F (135°C).
  3. Let cool.
  4. Mix lemon juice, lemon rind, 4 beaten egg yolks, and 1/2 cup sugar.
  5. Cook over hot water, stirring constantly, until the mixture is really thick (8 to 10 minutes).
  6. Cool.
  7. Fold in 1/2 pint whipped cream or 1 package beaten Dream Whip.
  8. Pour into the baked shell, ensuring all pockets are filled.
  9. Whip remaining cream or Dream Whip and spread on top.
  10. Refrigerate for 24 hours before serving.
