- Beat 4 egg whites until frothy; add 1 cup sugar, sifted with cream of tartar.
- Whip until it holds a stiff, glossy peak. Spread the mixture in a well-greased 9-inch pie pan and bake one hour at 275°F (135°C).
- Let cool.
- Mix lemon juice, lemon rind, 4 beaten egg yolks, and 1/2 cup sugar.
- Cook over hot water, stirring constantly, until the mixture is really thick (8 to 10 minutes).
- Cool.
- Fold in 1/2 pint whipped cream or 1 package beaten Dream Whip.
- Pour into the baked shell, ensuring all pockets are filled.
- Whip remaining cream or Dream Whip and spread on top.
- Refrigerate for 24 hours before serving.
