Ingredients

  • 1/3 c buttermilk
  • 1/4 c chopped fresh cilantro
  • 2 T sour cream
  • 1 T mayo
  • 1/2 lime rind
  • 1/4 t minced garlic
  • 1/4 t salt
  • 1/8 t ground cumin
  • 4 medium heirloom tomatoes
  • 1/4 t salt
  • 1/4 c very thinly vertically sliced red onion

Instructions

  1. To prepare dressing, combine first 9 ingredients in a small food processor or blender; process 30 seconds or until pureed, scraping sides of bowl occasionally. Cover & chill.
  2. To prepare salad, slice each tomato crosswise into 4 equal slices (about 1/2 inch thick.) Place 1 tomato slice on each of 4 salad plates; sprinkle slices evenly w/ 1/4 t salt. Top each serving w/ a few onion pieces & about 1 T avocado. Drizzle 2 T dressing over each serving; sprinkle w/ black pepper, if desired.
