Ingredients

  • 1 (6 to 8 lb.) capon
  • 1 tsp. seasoned salt
  • 1 tsp. thyme, crushed
  • 1/4 tsp. rosemary, crushed
  • 1/4 tsp. rubbed sage
  • 1/4 tsp. black pepper
  • 1/8 tsp. garlic powder
  • vegetable oil

Instructions

  1. Remove giblets and neck from inside the bird.
  2. Rinse the bird with running cold water and drain well.
  3. Combine seasoned salt, thyme, rosemary, sage, pepper, and garlic powder and rub over the outside and into the body cavity.
  4. Cover and refrigerate for at least 12 hours or overnight.
  5. Brush the skin with oil; roast uncovered in a 325°F oven for 3 to 4 hours, basting frequently.
