Ingredients

  • 2 cups uncooked rotini
  • 1 cup thinly sliced cucumber
  • 1/2 cup thinly sliced sweet onion
  • 6 tablespoons honey
  • 1/2 cup water
  • 6 tablespoons cider vinegar
  • 1 1/2 teaspoons prepared mustard
  • 1 1/2 teaspoons dried parsley flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder

Instructions

  1. Cook the rotini according to the package directions.
  2. Drain and rinse the rotini in cold water.
  3. Drain well and place in a large bowl.
  4. Add the sliced cucumber and sweet onion to the bowl.
  5. Combine honey, water, cider vinegar, prepared mustard, dried parsley flakes, salt, and garlic powder in a blender or jar with a tight-fitting lid; mix well.
  6. Pour the dressing over the pasta mixture and toss to coat evenly.
  7. Cover and refrigerate for at least an hour before serving.
