Herbed Coleslaw
Ingredients
- 2 tablespoons freshly squeezed lemon juice ⓘ
- 2 tablespoons olive oil ⓘ
- 1/2 teaspoon salt ⓘ
- 1/3 cup loosely packed fresh parsley leaves, finely minced
- 1/3 cup loosely packed fresh cilantro leaves, finely minced
- 3 cups shredded green cabbage ⓘ
- 2 carrots, peeled and shredded ⓘ
- 2 green onions, thinly sliced ⓘ
- 1/4 cup dried cranberries ⓘ
Instructions
- Add the olive oil to the lemon juice in a slow and steady stream, whisking continuously. Stir in the salt, parsley, and cilantro.
- Combine the cabbage, carrots, green onions, and dried cranberries in a large bowl, and toss with the dressing. Season to taste with salt, pepper, and more lemon juice, if desired.
