Ingredients

  • 2 cups cracked pepper
  • Parmesan croutons
  • 2 Tbsp herbs de Provence
  • 2 Tbsp olive oil
  • 2 (8 oz) fish fillets

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Brush the fish fillets with olive oil.
  3. Blend the Parmesan croutons and herbs de Provence in a food processor until finely ground.
  4. Coat both sides of the fish fillets with the bread crumb mixture.
  5. Place the coated fillets on a roasting rack in the oven.
  6. Roast for 45 minutes or until the fish is cooked through and crispy on the outside.
  7. Serve immediately.
