Herbed Fruit Compote

Ingredients

  • 1 teaspoon olive oil
  • 1 1/2 cups chopped onion
  • 2 cups water
  • 1/2 cup chopped dried pears
  • 1/2 cup chopped dried apricots
  • 1/2 cup dried tart cherries
  • 1/2 cup raisins
  • 1/4 cup sweet Marsala
  • 2 tablespoons honey
  • 1/4 teaspoon dried thyme

Instructions

  1. Heat oil in a large saucepan over medium heat. Add onion; cover and cook 10 minutes, stirring occasionally. Add water and remaining ingredients; bring to a boil. Reduce heat; simmer until thick (about 20 minutes). Pour into a bowl; cool.
  2. Note: Apple juice may be substituted for Marsala, if desired.
